1 box of GF chocolate cake mix
2 lbs of sweet cherries
1/2 Splenda or 1/3 cup of sugar
1 tsp of cherry extract
1 pint of heavy whipping cream
2 tablespoons of Splenda or sugar
Sweetened Whipping Cream
Place whipping cream into bowl and freeze for 5-10 minutes. Add Splenda or sugar and beat mixture until stiff.
Cherry mixture
Wash, de-pit, and cut cherries in half.
Place in pan. Add enough water to cover cherries. Add Splenda and/or sugar, and cherry extract. Cook until liquid is almost evaporated.
Instructions
Mix GF cake mix according to instructions.
Divide GF cake mix into two well-greased square or round cake pans.
Cook according to the directions, but cutting time in half (for example, if the box says cook 45 minutes, then cook for about 20-25 minutes).
Loosen cake from pans, cool on wire racks.
Once cakes are cool, place one cake on a plate or cake stand. Spread whipping cream on the sides and top of the first cake. Add half of the cherry mixture. Top with second cake and again spread whipping cream on sides and top of cake. Add the rest of the cherry mixture and then decorate with any left over sweetened whipping cream and chocolate shavings (optional). Enjoy!
